Intrepid, how about making a large pot of home made soup that would do you for the week? It could be vegetable, Scotch Broth, chicken noodle, bean, etc. If you're interested, I could send you a recipe.

I make a pot of soup through the colder weather for lunch.

By making it yourself, you can control the sodium content. Someone mentioned cheese, but that can be high in sodium . . . so just be careful.

This week I've made a cabbage soup with carrots, onion, garlic, turnip, celery and home made broth from our Thanksgiving turkey. I threw in some herbs that I brought in from the garden (basil & Rosemary, as wel as a bit of parsley).

You just have to be creative . . . taste and adjust. ;D

    Good Luck!

Read my suggestion on making home made soup. It's not hard. Give it a try . . . and good luck.

    Thank you Jacquie! :)
I really am a very good cook but I have so little time. If I don't have leftovers I end up just picking. It turns out after a strict low sodium diet for 3 years I discovered that sodium was never the issue. Your soup sounds delicious! I love veggies!

I know! I should be in therapy for the mental distress of 3 years of denying myself unnecessarily. I try not to be bitter. ;)
