Yellow pea, Parsnip, and Sweet Potato Soup

    Here is a soup that I recently concocted. It was so good that I thought that I would share. It's low sodium and does not need a stock. Joe



    Yellow pea, Parsnip, and Sweet Potato Soup

    1 1/2 cups split yellow pea
    1 tbsp olive oil
    1 leek, chopped finely
    1 onion chopped finely
    1 carrot diced
    3 to 4 garlic cloves, minced
    8 cups water
    1 large parsnip (200 grams), diced
    1 sweet potato, peeled and diced
    1 bay leaf
    1/2 tsp dried thyme
    1/2 tsp ground coriander
    1/2 tsp dried sage
    grated nutmeg
    garnish (parsley, chives, or cilantro)

    1. Rinse peas. Boil for three minutes, removing foam. Drain peas.

    2. Sauté onions, leeks, and carrots until nearly soft.

    3. Add parsnip, sweet potato, and garlic. Sautee until slightly browned.

    4. Stir in spices except for nutmeg, salt and pepper. Add peas and water.

    5. Simmer for 45 minutes to 1 hour until peas are very soft. Stir occasionally,

    6. Add salt, pepper, and nutmeg. Be careful that the nutmeg does not overwhelm.

    7. Remove bay leaf. Purée with pot blender. Otherwise transfer to blender.

    8. Adjust seasoning. (Cream can be added.)

    9. Garnish and serve.

    Serves 6. (I add 1/2 tsp of salt which adds about 200 mg of salt per serving. My guess is that there is less than 50 mg of Na per serving if no salt is added.) Yams and butternut squash are good substitutes for the sweet potato. The vegetables can be roasted in oven instead of sautéed. If you do not have a pot blender, ask Santa for one. They make kitchen life easier.

    I have never seen yellow peas... are they the same as green peas?

    Yes, yellow peas are just like green peas, except they are yellow. Some people think that they have an earthier taste. I used yellow peas in the recipe because I wanted the soup to have a distinctly yellow color, not green or chartreuse. Besides … I had yellow peas on hand.

    Yum Yum Yum Yummy Yum!

    I think that yellow peas are used in Indian Cuisine. Joe, yor recipe reminds me of some foods I ate in Holland. They are big on mixing the 'winter veg' together in different ways. Lots of things with parsnips, turnips and potatoes all grated or mashed together. Really great stuff! Your soup sounds like a real winner!
