I've found some low-sodium cheeses. Swiss cheese can be found that is as low as 50 mg/oz. There is a kind of mozzarella that is 10 mg/oz, but it's not in a block. The cheese is in little balls, packed in water. It's called mozzarella ciliegine. The brand I have is Palazzina, and I got it at Harris Teeter. It was in the gourmet cheese section in the deli. It tastes a little bland, but it's got a good texture. The term ciliegne means, I believe, cherry-sized, so any mozzarella packed in water may do. I also discovered mascarpone cheese, which is a spread. It has 5 mg/tbsp (2 tbsp=1 oz).
