    I've found some low-sodium cheeses.

Swiss cheese can be found that is as low as 50 mg/oz.

There is a kind of mozzarella that is 10 mg/oz, but it's not in a block. The cheese is in little balls, packed in water. It's called mozzarella ciliegine. The brand I have is Palazzina, and I got it at Harris Teeter. It was in the gourmet cheese section in the deli. It tastes a little bland, but it's got a good texture. The term ciliegne means, I believe, cherry-sized, so any mozzarella packed in water may do.

I also discovered mascarpone cheese, which is a spread. It has 5 mg/tbsp (2 tbsp=1 oz). It says it makes a delicious spread when mixed with honey or maple syrup, but I like it spread on crackers all by itself. http://en.wikipedia.org/wiki/Mascarpone

Two kinds of hard cheese are Comte Hard cheese (90 mg/oz) and Manchego (50 mg/oz). Both have good flavors. http://en.wikipedia.org/wiki/Manchego_cheese

Cheeses can vary in the amount of sodium from one brand to another, so check the labels.

Here are some low sodium crackers:

HT Traders Toasted Sesame Seed Water Crackers
    40 mg/4 Crackers
    Harris Teeter store brand

    Wellington Toasted Sesame Water Crackers
    70 mg/4 Crackers

So, eight of the HT brand crackers with two oz of cheese
    mozarela ciliegine (8 balls) = 90 mg/sodium
    mascarpone cheese (2 tbsp) = 90 mg/sodium
    manchego (2 oz) = 130 mg/sodium

I add mascarpone to my spaghetti sauce. Makes it creamy and delish!

There is a 'no salt' melba toast you can buy too. If you put something on it it's nice and crunchy.
