Breakfast Sausage (Making your own)

    to make a breakfast sausage take

    1lb of ground pork
    fresh ground black pepper to taste
    1/2 tsp dried sage
    1/2 tsp onion powder
    1/2 tsp garlic powder

    sprinkle spices over meat and mix by neading meat by hand for 5 mins. make sure spices are mixed in well and evenly distributed. place it in a container covered for at least a half hour overnight is better. this allows the spice flavor to permeate the meat. if making for pattys make into pattys put on plate then cover with plastic wrap or foil. cook as you would a normal patty in a frying pan.
    Serves 4
    Sodium aprox 65mg ( depends on the ground pork )

    Joe,

    That's a lot of sage for 1 pound of meat. Anyone wanting to try this, you might want to start with a little be less sage, its a very flavorful herb that can be overpowering.

    that sounds fantastic! I usually can't have breakfast sausage because it has cayenne pepper, paprika, and god knows what in it. I never thought of making my own! I am going to try it.
